FIRE AND WILD (or Fire + Wild) is an off grid, outdoor dining and foraging experience based just outside Lewes in Sussex. As it says on the tin, their focus is on wild food and cooking with fire and you can either join a guided foraging walk, a wild camping event or wild cocktail workshops. They also cater for private events, which is where we came across them recently as they hosted around 20 people at a private 60th birthday lunch.
It was a truly splendid, super-luxe BBQ experience.
Established in 2017 by chef, forager and hunter, Mark Andrews, it was a pleasure to meet him and to taste their exquisite food whilst becoming more aware of the provenance of our food and trying different “hyper-seasonal” dishes using wild food, fish and game.
I’m not usually keen on eating unusual things, but everything tasted delicious.
This was our menu – they also did some delicious canapés:-
Chalk stream trout, horseradish, elderflower
Courgette, sheep’s yoghurt, Twyneham Grange
Wood pigeon, blackberries, walnuts, baby leaf salad
Sussex venison loin, salsa verde, thyme crumb
Burnt cheesecake, meadowsweet, strawberries
So this was their set up for our private event:-

Not a great photo of the venison loin, but it was unbelievably tender and the salsa verde was a great compliment to the flavour:-

This dessert was absolutely delicious:-

I would highly recommend the experience and see on their website they have gift vouchers which would make a great present. Looks like they get pretty booked up though! Unsurprisingly.
