I went out this morning for an hour to catch up with my lovely friends for a walk and a coffee and a much needed therapy session and when I came back my 8 year old had made a cake. He of the “find any excuse to make a cake” fame…”Mother’s Day Cake”, “Coming Back Home From School Cake”, “I Haven’t Got Any Homework Cake” – this one, I think was the “We’ve Got Friends Coming To Stay Who I Haven’t Seen Since I Was Two Cake”.
He’d printed off a recipe he’d found on the internet:-
Ingredients
For the sponge
3 eggs
Self Raising flour
Margarine
Caster Sugar
1 tsp Baking powder
For the buttercream
75g Butter
icing sugar
Method
Weigh the eggs in their shell and make a note of their weight
Weigh out the same weight in sugar, flour and margarine
Beat the margarine and sugar in a large mixing bowl until the consistency is creamy
Break the eggs into the mixture and add the flour and baking powder.
Mix ingredients together.
Divide the mixture evenly between two greased 18cm cake tins and place in a 180C oven for 25 to 30 minutes.
Remove a place on a cooling rack.
Make the buttercream by beating together the butter and icing sugar.

I asked my teenage son if he had helped him. He was supposed to be looking after him whilst I was out. “What cake?” he said, “I’ve been revising”.
It even tasted delicious:-
