My 9 year old invented a new cake yesterday. He and his father had grown some courgettes which he then decided to turn into a cake because, well, he turns everything into a cake and anyway anything vaguely green fills him with horror. So he decided to make courgette bread…but his sister wanted to make banana bread, so, they each made their own cakes and merged the third one together creating (apart from something surprisingly edible) a HUGE mess in my kitchen.
“We’ll have to call it “Baguette Bread” then” said my daughter, which we agreed sounded odd. Last night we had dinner with some Aussie mates and in Australia/America they call them “zuccini’s” instead. So it was decided that it should be called “Baccini Bread” not only because it was a combination of banana and zuccini but because we felt it could be marketed as “Bikini Bread” as it is vaguely on the healthy option scale of delicious foods to eat.
So. As it was his idea, he wrote out the recipe himself. I haven’t changed the spelling mistakes.
Here were his hand grown courgettes:-

BACCINI BREAD RECIPIE
INGREEDIANTS
250g plain flour
5g baking powder
2g salt
115g butter
110g fine brown sugar
2 eggs beaten
525g mashed overripe bananas
2 tsp vanilla extract
3\4 freshley grated nutmeg
2 courgette corsley grated
250ml olive oil
HOW TO COOK IT
Turn oven on to 180 C
Get a bread tin spread butter in tin to stop everything sticking
In a mixing bowl mix the flour and baking powder and salt
Stir together butter and sugar until smooth and thick when thats all done pour in to bowl then beat the eggs and pour in to bowl and mix everything together
Add mashed banana and grated courgette
Put in tin and cook for one hour – might be ready before – check by putting skewer in to middle and if clean when comes out then its cooked.

July 28, 2009Yum! Courgettes can also substitute for carrots in carrot cake (v moist you see) and, when grated, make a surprisingly good creamly sauce for pasta!

July 28, 2009Funnily enough I was looking at a courgette cake recipe today (in Nigella's "How to be a Domestic Goddess" – I live in hope)but that bread looks better. How wonderful that he makes his own recipes – very adventurous!

Going back to African attire, up north where we are, quite close to Zambia, it is hot during the day and pretty cold at night… so layers are great. white things will get covered in dust probably. I can't live without warm socks in the evenings. Jeans and fleeces for the cool evenings & mornings, but you will be removing all the warm stuff during the day, I think! Cowboy hat.. definitely a must!
